中间香型烤烟生长发育过程中致香物质变化规律 李小勇,赵铭钦*,拓阳阳, 周亚丛 (河南农业大学,国家烟草栽培生理生化研究基地,郑州市农业路63号,450002) 摘要:以延边地区主栽品种“吉烟9号”为试验材料,对中间香型烤烟中的致香物质积累与转化规律进行了研究。结果表明,从烤烟移栽后55d到调制结束后,烟叶中石油醚提取物和中性致香物质总量呈现升-降-升的变化趋势,且均以调制后含量最高。在中性香气物质中,以质体色素代谢产物中新植二烯和类胡萝卜素降解产物所占比例最大,同时烟叶中的类胡萝卜素降解产物以移栽后65-75d和移栽后85d至调制结束类胡萝卜素降解产物的积累相对较快;苯丙氨酸类降解产物表现为先升后降的变化趋势,以移栽后75d含量最大;类西柏烷类降解产物和棕色化反应产物积累规律大致表现为升-降-升的变化趋势,以调制过程中积累最快。 关键词:中间香型;致香物质;石油醚提取物;中性香气物质 中图分类号:S572 文献标示码:A 文章编号: Studies on Aroma during the Growth of Flue-Cured Tobacco Leaves in Yanbian area Li Xiao-Yong, Zhao Ming-Qin, Tuo Yang-Yang, Zhou Ya-Cong National Tobacco Cultivation, PhysiologyBiochemistry Research Center, Henan Agricultural University, Zhengzhou 450002,China Abstract: With the main variety of Yabian Jiyan No.9 as test materials, the petroleum ether extract and aromatic matter of flue-cured middle leaves during the growth and development were quantitatively analyzed. The results showed that from 55 days after transplated to end after cured, the contents of petroleum ether extract and aromatic matter of flue-cured middle leaves had a positively related and close relation; In plasmids pigment metabolites, the contents of aromatic components from the carotenoids and neophytadiene had a large proportion in total aromatic matter, but products of other metabolics only had less proportion in total aromatic matter. During the growth and development of flue-cured tobacco, the contents of aromatic components from phenylalanine first increased and then decreased, and with the largest content at 75 days after transplanted, the contents of benzaldehyde and benzyl alcohol increased all the time, but the contents of Linalool and Phenylacetaldehyde had a opposite change; the contents of aromatic components from the carotenoids accumulated relatively fast in 65-75 days after transplanted and transplanting 85 days to end after cured, and β-damascenone, β-ionone, megastignone, farnesyl acetone is the main matter; also the contents of pe
