淮 阴 工 学 院 继 续 教 育 学 院 毕业设计（论文）报告 题目 酿酒副产物黄水的综合开发与利用 2010 级 酿酒工程 专业 学 生 姓 名 陆艳 指 导 教 师 起 讫 日 期 设 计 地 点 年 月 日 酿酒副产物黄水的综合开发利用与研究 摘要：黄水是白酒生产过程中的副产物，为棕黄色液体,因其舍有大量丰富酸、酯、醇、醛等香味物质，还有较多的有益微生物。因此，黄水的应用成为当前的研究热点。同时通过黄水可判断酒醅发酵情况；可以进行灌窖与养窖；可进行丢槽酒的串蒸；可培养人工窖泥；通过脱色、直接蒸馏、制备酯化液等工艺处理后，用来勾调新型白酒，可以明显提高白酒的质量与口感。本文主要结合洋河酒厂的实际情况介绍酿酒副产物黄水的综合开发利用与研究，共同提高酿酒副产物黄水的利用率，获取更高的经济价值。 关键词：白酒；黄水；利用 Title Study on comprehensive development and utilization of yellow water of wine fermentation byproduct Abstract Yellow water ,the byproduct of wine fermentation ,is yellow sticky liquid and contains abundant flavoring materials including acids、esters 、alcohols 、aldehydes and more beneficial microorganisms Therefore, the applications of yellow water become hot spots. While yellow water can be judged through fermentation fermented grains situation; can keep filling pits and pit; wine can be a string of lost steam bath; fosters artificial pit mud; through bleaching, direct distillation, liquid, etc. Process esterified, the use of to blending new liquor, can significantly improve the quality and taste of liquor. In this paper, combined with the actual situation of Yanghe winery introduced the comprehensive development and utilization of yellow water, jointly to improve wine yellow water byproduct utilization, achieve higher economic value.
