8种广式月饼营养成分分析   摘要 广式月饼是中国南方地区的传统食品。随着生活水平的日益提升,人们对自身的健康越来越关注。对市场上常见的8种广式月饼的营养成分进行了分析,采用国标理化分析方法和原子吸收分光光法,测定8种广式月饼营养成分的含量和营养素参考值。结果表明:能量最高的是双黄莲蓉,最低的是冰皮水果月饼;蛋白质最高的是火腿五仁月饼,最低的是冬蓉月饼;脂肪最高的是双黄莲蓉月饼,最低的是冬蓉月饼;碳水化合物最高的是冬蓉月饼,最低的是冰皮水果馅月饼;钠含量最高的是火腿五仁月饼,最低的是莲蓉月饼。从而为消费者的购买和合理食用广式月饼提供一定的参考依据。   关键词 广式月饼;营养成分;能量;蛋白质;脂肪;碳水化合物;钠   中图分类号 TS210.7 文献标识码 A 文章编号 1007-5739(2016)20-0252-02   Analysis on Nutritional Components of Eight Kinds of Cantonese-style Moon Cakes   CAI Jia-zi HE Xin DING Min CHEN Miao-lan YE Zhi-wu LI Ting-hua   (Jiangmen Supervision Testing Institute of Quality and Metrology of Guangdong Province,Jiangmen Guangdong 529000)   Abstract The cantonese-style moon cake is a traditional food in the south of China.With the increasing improvement of the living standard,people pay more and more attention to their healthy.In this paper,the nutritional compositions of eight kinds of common cantonese-style moon cake on the market were analyzed,and the methods of physico-chemical analysis on the basis of national standard and atomic absorption spectrometry were used to determine the nutritional components and reference values of eight kinds of moon cakes.According to the results,among them,the highest levels of energy was the double yolks-loutus moon cake,the lowest was the snow-skin moon cake;the highest levels of proteins was the ham-wuren moon cake,the lowest was the dong rong moon cake;the highest levels of fats was the double yolks-lotus moon cake,the lowest was the dong rong moon cake;the highest levels of carbohydrates was the dong rong moon cake,the lowest was the snow-skin moon cake;the highest levels of sodium was the ham-wuren moon cake,the lowest was the lotus moon cake.This paper offered some references for people to buy and eat cantonese-style moon cakes reasonably.
