This is the first work on the subject. It is really a classic written on the activities about tea, and is a condensed conclusion of the knowledge and facts about tea in Tang Dynasty and the pre-Tang times. 3. Classification of tea 茶的种类 green tea; 绿茶 black tea; 红茶 oolong tea; 乌龙茶 yellow tea; 黄茶 white tea; 白茶 dark tea (heicha); 黑茶 绿茶green tea 红茶black tea 黄茶yellow tea 白茶white tea 黑茶 dark tea (heicha) Green tea 绿茶 工艺:杀青(water-removing)—揉捻(twisting)—干燥(baking) Green tea is also called unfermented tea(未发酵). It is the variety that keeps the original color of the tea leaves without fermentation during processing.
