巾圈蓐 c童拒 第 24卷 第 3期 2008年 3月 htp:llwww.casb.org.cn ·221· 氮钙营养对菠菜可食部位草酸含量和钙 有效性的影响 李 彦,张英鹏,魏建林,杨 力,李国生,孙 明 (山东省农业科学院土壤肥料研究所,济南 250100) 摘 要:通过溶液培养的方法研究了不同浓度的氮钙营养对菠菜可食部位草酸及钙含量的影响。结果表 明,供钙浓度较 高时(Ca2和 Ca3)时 ,菠菜在 N,时获得最高产量;而在相 同供氮水平下 ,当供钙水平为 Ca2时,菠菜易获得较高产量。在 N2Ca2水平时,菠菜叶片苹酸总量最低,难溶态草酸含量最低,可溶态 草酸较低。叶柄草酸总量最低的是N3Ca2处理,而可溶态草酸含量最低的是N2Ca3。在不同氮钙处理中, 以N2Ca2处理的菠菜钙含量和有效性最高。因此,在N2Ca2水平时,菠菜生物量较高,叶片草酸总量和难 溶态草酸含量最低,可食部位的钙含量和有效性最高。综上所述,通过调控氮钙营养降低菠菜可食部位 的草酸含量和提高钙有效性,进而提高菠菜的营养品质是完全可行的。 关键词:氮钙营养;菠菜;可食部位;草酸总量;可溶态草酸;难溶态草酸;钙有效性 中图分类号 :$636.1 文献标识码 :A Efects of Nitrogen and Calcium Nutrition on Oxalate Content and Calcium Bioavailability in Edible Parts of Spinach Li Yan,Zhang Yingpeng,Wei Jianlin,Yang Li,Li Guosheng,Sun Ming (Soil and nil erInstitute,ShandongAcademyofAgriculturalSconces Jinan 250100) Abstract:Solution culture was used to study the efects of diferent nitrogen and calcium nutrition on ox—- alate and calcium content in edible parts of spinach.Results showed that spinach achieved the hi ghest biomass supplied with N3 when calcium concentrations were high(Ca2 and Ca3),while under the same N lev— el,spinach tended to achieve high yield with Ca2 supply.At the N2Ca2 level,both total oxalate and insoluble oxalate content were lowest in spinach leaves and soluble oxalate content was lower.Total oxalate in petiole was lowest of N3Ca2 treatment while soluble oxalate content was lowest with N2Ca3 supply.Among nitrogen and calcium treatments,spinach supplied with N2Ca2 had the highest calcium content and calcium bioavail— ability.Thus,when spinach was supplied with N2Ca2,it had higher biomass,the lowest total oxalate and in— soluble oxalate contents in its leaves,the highest calcium content and calcium bioavailability in its edible parts.In one word,it was feasible that manipulating N and Ca nutrition could enhance the nutritive quality of spinach by reducing oxalate content and increasing calcium bioavailability in spinach edible parts.
