Abstract:Nutr itive and func tional composition in diff erent pa rts (body wall , intestine and spawn)of Stichopus japonicus
were investiga ted in this paper.The results were shown as follows:Stichopus japonicus was of high protein and the content
of protein in the intestine and spawn were higher than those in body wall;Cu , Fe , Mn , Zn and other metal elements were
abundant , which were more likely enr ichment in the intestine;the content of δ-VE was high , espec ially in the in testine;the
pe rcentage content of acid mucopolysacchar ide in the body wall was high and the content was 5.03%;composition of am ino
acids was complete , and fr ee am ino acids(FAA)were r ich.H ydroxyproline which was the basis of collagen protein accoun-
te d for 4.20% in the body wall;ther e were 23 kinds of f atty acids were detected and it was found tha t the essen tial f atty
acids content was high , especially the content of C20∶5 n3(EPA)was 16.06% in the intestine. I n conclusion , Stichopus
japonicus was of high nutrition value and some of ficinal value.
