ABSTRACT: Objective To establish a method for the determination of the composition and content of phytosterols
in wheat germ oil, soybean oil and garlic oil by gas chromatography. Methods Samples were saponified by
potassium hydroxide ethanol-methyl tertiary butyl ether solution on water bath, and extracted with iso-octane.
Phytosterols were separated by capillary gas chromatography. Results Phytosterols components showed a good
linear relationship in the corresponding concentration range, correlation coefficients were from 0.9997 to 0.9999, the
average recoveries were 96.8%~101.3%, and the relative standard deviations were between 0.4%~1.0%. Conclusion
The phytosterols from wheat germ oil, soybean oil and garlic oil are mainly composed by campesterol, stigmasterol
and β-sitosterol, and the highest content is β-sitosterol, the total amount of phytosterols in wheat germ oil is the
highest.
