２０17 年 7 月 食品研究与开发 第 38 卷第 13 期 Ｆood Research And Development 标准与检测 136 DOI ：10.3969/j .issn.1005-6521.2017.13.028 凉薯酒挥发性成分分析 1 1 1 1 1 2 谭沙 ，杨益叶 ，朱仁威 ，李刚凤 ，李丽 ，宋姗姗 （1. 铜仁学院 材料与化学工程学院，贵州 铜仁 554300 ；2. 遵义职业技术学院，贵州 遵义 556300 ） 摘 要 ：使 用 固相微 萃取法（SPME ）提取 凉薯酒的挥发性化 学物质 ，气相 色谱-质谱 （GC-MS ）分析其挥发性成分 。结 果显示 ，共鉴定 出了 44 种挥发性成分 ，其 中含 量最 高为醇类 ，为 96.678 % ，另外则是 少量 的烷 烃类 1.316 % 、酯类 0.818 % 、酸类 0.538 % 、醛类 0.065 %及烯类 0.031 % 。凉薯风味 酒的主要挥发性成分为 乙醇 ，其相 对质量分数 高达 84.726 %。其次含有 3.468 %的 3- 甲基-1-丁醇 ，2.565 %的丙三醇 ，2.103 %的异丁醇 ，这几种物质可初 步确定是构成 凉薯风味酒独特风味的挥发性物质 。 关键词 ： 凉薯酒；挥发性成分 ；成分分析 Volatile Compounds Analysis of Pachyrhizus Wine 1 1 1 1 1 2 TAN Sha ， YANG Yi-ye ， ZHU Ren-wei ， LI Gang-feng ， LI Li ， SONG Shan-shan （1. Re－ sults showed that 44 components were identified.Alcohol accounts for the largest proportion that was 96.678 %. Alkane ， easter ，acid ，aldehyde and alkene account for a relatively smaller proportion that respectively was 1.316 % ，0.818 % ，0.538 % ，0.065 % ，0.031 %.The main volatile compound of Pachyrhizus wine was ethanol in a relative content of 84.726 % ，followed by 3-Methyl -1-butanol 3.468 % ，Glycerol 2.565 % ，Isobutyl alcohol 2.103 %.
