In preprocess- ing, 24 bits color mi ages are converted to 256 colors gray mi ages. A method for recognizing different objects at the same tmi e is put forward, bywhich objects are separated from background and identified. Once the objects are identified, color data of object area are taken as analytical data to compute real tmi emoisture value of each object at a certain point. Thereby the purpose tomeasuring quantificationalmoisture value or statistic ofmoisture in fruits and vegetables can be achieved by mi age processing in CT mi age.
