PAGE 2 摘 要 荔枝产于我国南部，是亚热带水果，其果肉鲜甜而且富含营养价值，世界上只有中国、越南、泰国等少数几个亚洲国家能种植荔枝。我国是荔枝的生产大国，每年的产量巨大，而且产期相对集中，大约是每年的6,7月份。荔枝大多以内销为主，只有极少部分用于出口，而其果肉保鲜难度大，不适宜长距离运输。此外，荔枝的产后加工现状也不甚理想，主要以荔枝罐头、荔枝干、荔枝果酒等传统食品为主，远不能满足经济和社会的发展需求。对于目前荔枝的生产状况，我们要充分发挥荔枝高产量的经济效益，就必须提高荔枝的产后加工能力，从多方面，多渠道开发荔枝的经济价值。为此，本人设计了一部荔枝的产后加工机器——荔枝去核剥壳机。 该机器主要有两个功能，一是去核，二是剥壳，同时把分离的果核，果肉和果壳分别收入各自的收集器中，用于以后的生产加工需要。要实现上述两个功能，为该机器设计了三个机构，从上到下分别为：定向机构、去核机构、剥壳机构。定向机构是用于给荔枝定向，让荔枝以一定的方向落入料夹中，方便去核功能的实现；去核机构位于机器的中部，去核刀在去核刀轴的控制下完成去核；剥壳机构则位于整部机器的下部，利用三个棍之间的相互作用，简单快捷地实现果壳分离。 本研究设计有助于提高荔枝的产后加工能力，减少果肉，果汁的损失率，可以用于荔枝加工生产企业，提高其自动化程度，节省人力，提高生产效率和产品质量。 关键字：荔枝 果肉去核 果肉剥壳 荔枝果肉剥取技术 荔枝生产现状 Litchi to Nuclear Sheller Design Specification Zeng Guoxin (College of Engineering,South China Agricultural University Guangzhou 510642,China) Abstract: Litchi produced in southern China, is subtropical fruits, its pulp fresh sweet and rich in nutrition value, the world only China, Vietnam, Thailand and a few Asian countries can cultivate the lychee.
