And as a Chinese old saying goes: people regard food as their first prime want. This is also true to foreigners. Thus, dieting in China is an important matter of the foreign friends. However,different dieting habits, culinary arts and the unique Chinese catering culture often lead the foreigners into awkwardness and misconception. Therefore, good and appropriate translation of Chinese dish names plays a prominent role on menus or on occasions concerning dining. Through deep studying of Eugene A. Nida’s translation theory of “Equivalent Effect” and analysis of Chinese cuisine,this paper attempts to achieve the following goals: firstly,to improve and perfect the translation of Chinese cuisine; Secondly,to provide reference to restaurants and hotels; Thirdly,to promote foreigners1 understanding of Chinese dieting culture and other cultures and its long history and lastly,to introduce Chinese food culture to the world.
