本科毕业论文 （ 20_ _届） 青年旅舍的特色餐饮初探 摘 要：如今杭州住宿餐饮行业竞争十分激烈，逐渐趋于两级分化与特色经营。在如此激烈的竞争中，有一支异军正在突起，在行业红海中寻找到属于自己的蓝海市场。这是一种依托杭城风景名胜区，以特色餐厅结合青年旅舍，倡导回归自然的理念的新兴住宿餐饮产品。它拥有得天独厚竞争优势，例如：成本优势，利用率优势，环境优势，理念优势，接待形式多种多样的优势等等。还具有与传统企业相比的不可复制性。同时也存在一些缺陷与局限，例如：档次无法太高，受地域与规模的局限，相比传统住宿餐饮企业更需要变化与创新。该产业总体来看是非常有潜力与前景的，有望发展成为杭城新地标。 关键词：青年旅舍；特色餐饮；不可复制性；竞争力 Discuss On Niche Food And Beverage Market Of Youth Hostel Abstract: Nowadays, with the extremely intense competition of Food and Accommodation field in Hangzhou City, two new tendencies that expressed by the polarization and the distinctive management come in to view. Confronted with the fierce competition, a dark horse characterized by its environmental and natural consuming idea emerged. It is a fresh product in Food and Accommodation field which is located near the scenic resorts providing a distinctive food＆beverage service and also consists of economical accommodation. It is a kind of Mid-stage consumption catering mainly for the young and middle-aged with plenty of advantages, such as the cost-effective feature, the high coefficient of utilization, the graceful surroundings, the creative theory for managing, and the various patterns of reception and so on. Moreover, compared to the traditional corporations in this field, it outstands for the non-reproduction. Meanwhile, the disadvantages, which should not be neglected, include the restriction of the location and scale, comparatively higher demand for creativities and variations, and also the limitation of the consuming level. Generally, the perspective product of great potential will hopefully develop to the new ground mark of Hangzhou city.
