Unitech A sia P acif ic td. , B eij ing 100027, Ch ina) Abstract: T he electrical conductivity of O/ W emulsions with different oil volume fraction was measured. T he influences of oil volume fraction in O/ W emulsion, emulsifying conditions and temperature on the electrical conductivity of O/ W emulsions were studied. T he relation between electrical conductivity, the change fraction of concentratedphase volume and the absorbance of O/ W emulsion were investigated as well. T he results showed that the electrical conductivity of O/ W emulsion was affected by oil volume fraction obviously. The larger the oil volume fraction, the less the electrical conductivity of the emulsion is. T he severer the emulsifying condition, the less the electrical conductivity of the emulsion is. T he higher the temperature, the more the electrical conductivity of the emulsion is. During the breaking process of O/ W emulsion the creaming, flocculation and coalescence of the oil droplets, the change of the oil volume fraction and the stability of the emulsion could be measured by the curve slope
